Gold Seal Rich, complex and sweet. Slightly pungent, with aromas of oak and cherry with a long, bright finish. Use it where it can dazzle. Drizzle over creamy desserts such as panna cotta, zabaione or gelato. Delicious over savory dishes like sliced figs with gorgonzola and walnuts. Ideal over a tuna or beef tartare.
Silver Seal Thick as molasses, with notes of cooked grapes and raisins. Bright and lively, with a long, subtly acid finish. Drizzle over a sizzling hot steak, pork chops or grilled vegetables. Swirl into butternut squash soup or creamy Parmesan risotto. Highlight the freshness of freshly composed fruit salad.
Red Seal The everyday vinegar for all-purpose use. Thick as maple syrup and slightly pungent, this young balsamic has the aroma of fresh raspberries with a sparkling acidic finish. Use for all types of salads. Perfect over ripe tomatoes, as well as for deglazing roasting pans, brushing over grilled meats and making sauces and marinades.

In 2011, an outdated labeling method for balsamic vinegar (based solely on years of age) was replaced with the Aceto Balsamico di Modena IGP (Balsamic Vinegar of Modena, Protected Geographical Indication) and its strict guidelines for production. Under these new regulations, individual producers in Modena must identify both the age and viscosity of their vinegar according to a proprietary symbol. Acetaia Leonardi has chosen to use coins— Three Coins and Red Seal (young), Four Coins and Silver Seal (medium) and Five Coins and Gold Seal (thick).
